Fruity Halloumi Salad
260 grams halloumi cheese
15ml sesame seeds
90ml (50g) cake flour
Sunflower oil to fry
1 packet rocket
250ml seedless grapes
1 mango, peeled, stoned and sliced
15ml freshly chopped mint with a few leaves to garnish
150ml Greek yoghurt
15ml lemon juice
5ml curry powder
Throw it together like this
1) Cut the halloumi cheese into slices and mix the sesame seeds with the flour. Coat each piece of cheese with flour and shake off the excess.
2) Arrange the fruit and rocket on a platter or the individual plates that you will serve. Add half the chopped mint. Mix the ingredients together for the dressing. Add the rest of the mint.
3) Heat oil in a frying pan over a medium to high heat. Fry the pieces of halloumi cheese on both sides until golden brown and then drain on absorbent paper.
4) Arrange the cheese on the salad and drizzle with dressing. Top it off with whole mint leaves for garnish.
Serve with a delicious glass of Tall Horse Merlot!
