We are big on leaves and in summer there’s nothing quite like a leafy, green salad! Try this Green Summer Salad..this is extremely delish when paired with a Sauvignon Blanc!

For this salad you can literally use any of the greens that you enjoy! Broccoli, Baby spinach, lettuce, sugar snap peas, dill cucumber…whatever tickles your fancy!
We have added parsley, mint and spring onions! You can even decorate with some edible flowers!

1)Bring a pot of water to the boil, blanch broccoli for 20 sec, add sugar snap peas and continue to cook for a further 40 sec, remove from the water and refresh in a bowl of iced water.
2)Arrange all the salad ingredients onto a plate.
3)Place the anchovies, spring onions, dill, parsley and mint in a bowl and whiz with a stick blender until all ingredients are finely chopped.
4)      Whisk in the mustard, oregano and vinegar , then slowly drizzle in the olive oil and season with salt and pepper. The vinaigrette will separate on standing. Whisk together before use and pour over the salad.
